Sautéed Shrimp in Butter and Garlic

Ingredients

1/4 pound fresh or frozen shrimp

2 tablespoons of garlic sliced thin

2 teaspoons red pepper flakes

3 tablespoons olive oil

4 tablespoons butter or margarine

1/2 fresh lemon (for juice and zest) or 1/3 cup bottled lemon juice

2-3 tablespoons grated parmesan cheese, optional

2-3 tablespoons parsley - or cilantro chopped finely for color, optional

6 ounces Angel hair or a thinner, flat type spaghetti

Make marinade: combine garlic, olive oil, red pepper flakes

add rinsed and defrosted shrimp; refrigerate until ready to cook (30-60 minutes for flavors to meld nicely). If in a hurry, you can just marinate 10 minutes but flavors may be less intense

Cook pasta according to directions (angel hair spaghetti recommended) - (link to cooking pasta)

Low and slow - Heat a fry or grill pan. When hot, add the shrimp and marinade and sauté shrimp in marinade , and butter or margarine As it cooks, smash some of the garlic to release oils Turn the shrimp, as they turn pink; when second side is pink,

add lemon juice to complete the sauce Adjust the sauce , Taste - the sauce should be nice and tart and there should be a least 1/4 cup of liquid. The tartness of the sauce gets mellowed when it is tossed with the pasta.

Drain cooked pasta, add pepper, some parmesan

To plate:
remove shrimp from pan
Pour the sauce from the pan over the pasta
grate lemon zest over the pasta
if adding cheese, do it know
Toss

arrange shrimp on top of pasta and server

Tip: use leftover pasta to absorb any sauce left on grill pan for good next day leftover pasta dish.
